Ingredients

 
Cake:

  • ½ cup (1 stick) softened butter
  • ¾ cup sugar
  • 2 eggs
  • ½ cup milk
  • 1 ¾ cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 jar LC Farms Artisanal Fruit Spread

 
Streusel topping:

  • 2 T softened butter
  • 3 T all-purpose flour
  • ⅓ cup sugar
  • 1 tsp ground cinnamon

 

Preparation

 

  1. Preheat oven to 350 degrees
  2. Generously butter a 9 inch square or round cake pan (sides should be 2 inches high)
  3. With a fork work the streusel ingredients together until moist and crumbly and set aside.
  4. In a small bowl, beat together the butter and sugar until light and fluffy.
  5. Add the eggs and beat until well incorporated. 
  6. Add one half of the flour mixture, beating well; then add the milk and the rest of the flour. 
  7. Spread a little over half of the batter into the pan. Using a tablespoon, drop dollops of the LC Farms spread evenly over the batter. 
  8. Spoon the rest of the batter over the jam in small mounds (there should be gaps so the jam shows through).
  9. Sprinkle the streusel topping evenly over the top and bake for 40 minutes or until golden and a toothpick comes out clean. 
  10. Serve warm with whipped cream or ice cream.
