Ingredients
- Crust:
- 1 pkg puff pastry
- 1 container fromage blanc or brie (rind removed and cut into about ¾” squares)
- 1 8oz jar of LC Farms Lemon Lavender Jelly
- 2 cups washed blueberries or strawberries diced into blueberry-sized chunks.
Preparation
- Preheat oven to 400 degrees
- Using a mini muffin pan, generously spray with cooking spray in the wells and the top.
- Roll out the puff pastry and cut into squares big enough to fit in the wells and the corners barely hang over.
- Put approx. 1 tsp dollop of fromage blanc or brie cube in the wells.
- Top the cheese with about 2-3 berries depending on the size of berries or pieces and 1 tsp of jelly.
- Bake in the oven for about 10 – 12 minutes. (Keep an eye on them). Once the edges are puffed and golden, remove them from the oven and let them cool. Plate and enjoy.
Tips
Can also use cream cheese in a pinch.
