Add wings and brine to a large ziplock to sit in fridge for 6-12 hrs. Turning occasionally.
Preheat oven to 250^F. Line a rimmed baking sheet with parchment paper, then place a wire rack on top.
Drain the wings and brine. Remove any jalapeno seeds that are stuck to the wings or they will be extra hot. Pat dry and place on the wire rack. (Even better to let them sit open in the fridge to dry out for a few hours) Once you have them dry, mix the dry ingredients together and toss with the wings to get them all coated. Place back on wire rack and into the 250 degree oven for 30 minutes.
After the 30 minutes, increase temp to 400^F and bake for 40 minutes.
NOTE: if wings are small, try 20 minutes and then check for crispyness and add time until they have reached 165^F internal temp.
Enjoy!!!! These will be pretty spicy but enjoyable. Everybody’s tolerance is different.
